About time you got the coilovers sorted, its been long enough

Brakes can be anything to be honest, just get something decent, all depends what you want to do wheel wise in the future. If you fit say ST150 brakes, you'll never get steelies on the front because you need a minumum of 15" wheels to clear them. Something to think about.
ECU wise - deep is supposedly the best, I am not 100% sure why, but people rave about it. I'll do research for my own benefit too later why its considered better. I have a dewy ecu and it pulls like a train in all gears, all the way to the redline no problem. Probably starts to loose power at about 6000 rpm, which is normal. The other ecu to use is a desk one.
Loom can be gotten from any mk3 fiesta with a zetec car - Si, RS1800, xr2i 1.8 for example. I thiiiink you can use the escort loom to as its pretty much the same, if not exactly the same.
Drilling the chassis shouldnt be too hard of job, or too complicated. It might be worth looking in your engine bay to see if it already has the holes. Some do. My old 1.3 did! Guides can show you where to drill, if you are still stuck, ill grab a pic of where the mount needs to be ect. That and the loom are really the only changes you need to make, im 99% sure of it.
Bits needed from the 1.6 - i will list it as if it was a 1.6-2.0 because some 1.4 items may be different - like the alternator and PAS pump ect. Depending how much Tom is giving you will depend what bits you need of course.

water pump - which is new on that engine anyway? so thats ok
sump and pick up pipe - on engine?
exhaust manifold - on engine?

dipstick tube - may differ to 1.4 one
oil pump - new on engine?

starter motor - may be able to use 1.4 one
all the sensors - should be on the engine - also need lambda sensor
injector rail*

* = will probably come on a HO inlet manifold - which is something you will need to get full power out of the engine
also you will need the throttle body from a 2.0 or rs1800
coolant hoses
you may need the 1.6 rad if it differs to the 1.4 one, also rad fan too perhaps
engine mounts - but you will have them
loom & alternator+stater motor wiring
aux belt
I think thats it. Most of that will be on the engine anyway, so you can knock down that list to near on half straight away.
