I'm doing this myself atm too, heres a list of parts you will need
fiesta si 1.6 engine mount
gearbox with ratios to suit as the 1.1 box will be crap on fuel
fiesta si engine loom
fiesta si full exhaust system
ecu for a 1.8, the gti ecu is a 'SLUG' ecu with internal edis and internal pats, a way to get around the pats is to either have the escort gti key fixed to the pats pick up ring and pluged into the ecu/wiring loom still, or look for a mk3.5 rs1800 ecu which you will have to pay a premium for
fiest si fuel tank with inbuilt pump
fuel lines
1.8 maf sensor
1.8 injectors with inlet manifold
1.8 throttle body
as for brakes and suspension, if your set on keeping your 13" revolutions you will need a minimum of fiesta si brake with the vented discs and some green stuff pads or if you can afford it, drilled and grooved discs, rs turbo brakes will also fit and be enough to stop a 1.8
i'd also look at better suspension from the likes of the si also
